Bánh xèo with prawn and pork

Bánh xèo (a sizzling rice-flour pancake) is turmeric and coconut batter poured onto a hot pan; the sizzle gives it the name. Ours is about the size of a dinner plate, filled with tiger prawn, pork belly and bean sprouts, and eaten by rolling it in wild greens.

  1. The batter

    4 hours' soaking

    Rice is soaked, ground fine and mixed with turmeric and coconut cream for a yellow batter that is fragrant and lightly rich.

  2. The filling

    3 tiger prawns

    Tiger prawn, thin-sliced pork belly and bean sprouts are laid out ready, one portion for each pancake.

  3. The pan

    Ø 30 cm

    One ladle of batter goes into a hot cast-iron pan and is spread thin; the sizzle is the edge starting to crisp.

  4. The fold

    5 minutes

    Filling goes on half the pancake, a lid on so the sprouts soften, then it is folded once the edge is crisp.

  5. The leaves

    Wild greens and mustard leaves come alongside so you roll each piece in a leaf yourself.

  6. The dip

    1 bowl for 2 people

    A bowl of sweet-sour fish sauce sits in the middle of the table; dip lightly so the crust stays crisp.

What is in it

One large pancake of rice flour, turmeric and coconut cream, filled with tiger prawn, pork belly and bean sprouts. It comes with wild greens to roll it in and a bowl of fish sauce to dip. On the menu it sits in Braises, soups and rice, but at the table it works as the opener: cut it up and share it round.

How to eat it

Break off a piece while it is hot, set it in a mustard leaf with a few of the greens, roll it up and dip it in the fish sauce. The crust is crispest straight from the pan, so we suggest ordering it once everyone has arrived. One pancake feeds two or three people before the main dishes. Who it suits, who should skip it

Not spicy (level 0 on a 0 to 3 scale), so it works for tables with small children or older relatives who eat mild food. The crust is crisp; anyone with weak teeth can eat the filling wrapped in a soft mustard leaf.

Allergens: shellfish (prawn) and fish (the fish sauce). If you are allergic to either, skip this dish. The kitchen is shared, so we cannot promise there are no traces, and we track only nine allergen groups. It is not vegetarian: it has prawn, pork and fish sauce.
