What she does each day

Mai Thanh Vân is the sous chef at Bếp Rơm, in charge of the vegetarian dishes and the allergen table.

She keeps the table of nine allergen groups for all 31 dishes: crustaceans, fish, molluscs, peanut, soy, egg, wheat, sesame and milk. Whenever the kitchen changes a recipe, she updates the table before the dish goes back on the menu. When a booking arrives with an allergy noted, she is the one who messages the guest on Zalo, reminds them that the kitchen is shared, and asks whether the family has talked to a doctor about how severe the allergy is.

She cooks vegetarian dishes on their own pan and rack when she can, but we cannot promise there are no traces. The kitchen also tracks only nine groups; tree nuts, celery and other things are not tracked.

Dishes she is responsible for

Grilled straw mushrooms with chilli salt, sour soup with mushroom and tofu, silken tofu in tomato sauce and grilled aubergine with crispy shallots. See them all with the vegetarian filter and the allergen filter.

She writes reading a menu when vegetarian, avoiding heat or allergic, vegetarian days on the 1st and 15th, allergies to shellfish, fish and peanut and the 0 to 3 spice scale.
