Free-range chicken with chilli salt

Gà ta nướng muối ớt is half a free-range chicken rubbed with salt, chilli and lemongrass, grilled over wood until the skin tightens, then cut up and eaten with lime leaf. It is medium in heat, has no fish sauce, and feeds two to four people alongside rice and soup.

    A free-range chicken is split along the backbone, so each order is half a bird.

  2. The rub

    2 hours' marinade

    Salt, chilli and minced lemongrass are worked in under the skin and into the cavity, then left to take.

  3. Wood and coals

    40 minutes to build the coals

    The chicken goes on only when the wood has burned down to red coals, so the heat is even and the smoke is not black.

  4. The grill

    35 minutes

    Skin side down first, then turned several times so the skin tightens while the thigh stays just cooked.

  5. Carving

    The cooked chicken is cut into bite-size pieces on the board before it goes out.

  6. Lime leaf

    Shredded lime leaf goes on top, with a small bowl of chilli salt if you want it stronger.

What is in it

Half a free-range chicken rubbed with salt, chilli and lemongrass, grilled over wood and eaten with lime leaf. It sits in The grill. There is no fish sauce in it, and by our nine-group allergen table the dish has no allergen listed. “Free-range” here is gà ta, a country chicken raised longer than a factory bird, with firmer meat.

How to eat it

The chicken arrives already cut up. Pull off a piece, dip it in a little chilli salt, and eat it with lime leaf and plain rice. Half a bird is enough for two to four people with rice, greens and soup in one mâm (a set of dishes laid for the whole table). Who it suits, who should skip it

Medium heat, level 2 on a 0 to 3 scale. The chilli can come on the side or be lowered; tell us when you order, especially with children. Because there is no fish sauce, it suits guests who avoid fish and seafood. If someone eats mild food, ask for it milder. It is not vegetarian.
